Summer: there's nothing better than tucking into a delicious salad on a warm evening, preferably outside.
I have a delicious salad recipe that's quick and super easy to make. For those of you who are regular readers, you'll know I'm a huge food fan, but attempting to be healthy - so this kind of salad with interesting ingredients is a big hit with me.
The ingredients are all easy to locate, the only unusual part is you need to hop to your local Lakeland and pick up a bottle of Mary Berry Light Salad Dressing which is only £2.49. This dressing is the main reason I like salad at all - so I highly recommend it!

1/2 a butternut squash
chicken thighs & drumsticks, skin on
salt & pepper
1. Put your chicken in an oven-proof dish and add some olive oil and balsamic vinegar. Follow the instructions on the packet to cook your meat, but remember to turn the chicken so all parts get covered with the oil and vinegar mixture.
2. Cut your butternut squash into bite-sized cubes, toss in olive oil and tip onto a baking tray. Sprinkle salt and pepper on top and add to your oven.
3. To toast your pine nuts, add them to a frying pan cook over medium-low heat, stirring frequently, until golden in spots for about 3 minutes. If they start to go darker then make sure you remove them from the pan because they will burn quickly.
4. Prepare your cucumber into slices, red onion into thin slices, tomatoes and salad on the plate. Add your delicious chicken and butternut squash cubes once cooked. Toss with Mary Berry Light Salad Dressing and sprinkle with toasted pine nuts - hey presto - a delicious salad for your summer evening!
