Avocado on Toast - a healthy snack 

Those of you who read this blog regularly will know that I'm obsessed with food. I'm always trying to find new recipes, eat new things and always trying to find the perfect burger.

At the moment I'm trying to eat healthily - well I'm always trying to be healthy -  but 90% of the time I like to ignore myself and eat what I want.

I'm a big fan of Gizzi Erskine and always seem to love the flavours she puts together. I had the Skinny Weeks and Weekend Feasts recipe book on reserve and Postie made me a happy bear when it was delivered the day it came out.

The main message to be taken from the recipe book is this:
Eat healthily during the week, and then at the weekend... go ahead and treat yourself!

It has recipe plans, sensible and achievable meals which will allow to you get through the week without reaching for the biscuit tin. There are loads of fantastic dishes such as Korean Beef and Glass Noodles - big, fat, exciting flavours to keep you interested.

Yesterday I decided to try one of her simple recipes for breakfast and I was not disappointed - Avocado on Toast.

You need:
1 avocado
1 red chilli
1 lemon
salt and black pepper
1 slice of sourdough bread

How to do it:
1. Mash up half an avocado in a bowl with a fork. (Put the other half in the fridge, with the stone still in it and some lemon juice on top to keep  it fresh).
2. De-seed the red chilli and chop up. Add to the bowl.
3. Squeeze some lemon juice into the bowl and add your salt and pepper. Mix well.
4. Toast your bread (use a griddle pan to get those fancy lines) and spread your avocado mixture on top.

Sadly I didn't have any sourdough bread, but I used Kingsmill wholemeal instead. If you do use the sourdough bread, this delicious breakfast is only 278 calories!
